Have you thought of applying to the Google Summer of Code.  This could be a good opportunity to get more developpers on Processing.

Some ideas:
- make from scratch and under the LGPL liscence a polygon clipper that can handle holes, selfintersecting,...
- remake the P2D renderer
- make a non trivial performance boost and memory leaks fix

I think that's a great idea, just looking at last year's results (http://code.google.com/soc-results.html) shows the sheer quantity of stuff they get done. Of course someone would have put in a fair amount of work to actually be a mentor, but I think it would be worth it.
