I've just been going around the internet looking up different things I'm stuck on (started not that long ago) and I can't seem to find a good place to actually learn processing, does anyone know a really good tutorial? (preferrably written and not a video)

A good set of written tutorials is from http://staticvoidgames.com/tutorials
http://staticvoidgames.com/tutorials/hourOfCode/index - Smooth quick run through of how to use processing
While Basic & Intermediate concepts and object oriented Programming (which are located on the sidebar) gives a nice array of examples and learning tools to start being efficient and effective in processing.
If looking for a particular thing, github isn't too shabby as the processing world grows and grows. There are a lot of examples there and sometimes done by teachers, so it does have that tutorial like feeling
hope this help ( this forum as well, if searching in the area of help provides great insight)
There is also the Processing main website tutorials
