The J4K Processing library uses the J4K Java library, which implements a Java binding for the Microsoft Kinect SDK. The library comes with more than 10 examples in Processing that shows you how to create Augmented Reality applications, Natural User interaction in 2D, use the accelerometer for 3D interaction, render the depth stream as 3D depth map, visualize the video stream as a 3D textured surface, broadcast the skeleton data over the network using TCP, and read multiple kinects streams in one application.
More information can be found on the web-site of the J4K library: http://research.dwi.ufl.edu/ufdw/j4k
