A search revealed you could change the console font size previously in the preferences, however this appears no longer the case i.e. the following don't work console.font.macosx=Monaco,plain,20 console.font=Monospaced,plain,20 Any help greatly appreciated

It might depend on your version of Processing, but with the version I have, you have to change the lib/theme/theme.txt file in the Processing install dir.
