I'm looking to implement an app where the user drops nodes onto a canvas, connecting them with arrows, very similar to something you'd see in a diagramming tool.

Are there any examples of this or pre-existing libraries that already offer this feature?

There are Java libraries for that (search 'java graph library') but I don't recall having seen sketches doing that (but I could easily have missed them!).
