resolution issue

I suppose this isn't necessarily a Processing issue per se.  I have an issue where I set the resolution on my mac mini to 640 x 480.  When I restart the machine, it automatically resets to 800x600.  Is there a way with Processing (or perhaps Opengl) to control this or reset the resolution?

Or, slightly off topic, is it possible to change a registry setting to manual force the native resolution on my mac mini?
