Can anyone suggest a good IR camera (usb) that would work with processing on a PC?

pretty much every camera is an IR camera. You just need to remove the IR-Filter that most cams have built in. (or switch to "night-mode" if it's a DV-cam) In addition, if you want to filter out the visible light (eg to track a bright IR-spot in a camera image) you can put a old "unexposed but processed slide"* in front of the lense.

*(sorry, didn't know how to translate "ein unbelichtetes, entwickeltes Dia" into English. But thing i mean is below the lense in the first image on this page: http://www.emling-online.de/digital/irfilter.html )

I am aware of the conversion process, but I am planning a project that may be installed in potentially hundreds of places and I dont want to have to make hundreds of cameras.

Also me, for a project, in the beginning stages was involved to use a IR camera with Processing (but later I abandoned the idea). So, days ago I've found a video wich explains how to remove this filter from a "normal" spherical-shape webcam. Maybe it could help you...
