Hello guys. I´m a beginner and I want to do this for an art project

It´s me in the video and the tracing is done in After effects just to show you what I´m trying to do. Maybe you can give me some advice on how to do that interactively best.

I thought of making a picture of the background and "telling" processing to trace everything that dosn´t "look" like the background. And to put a grid on that particular shape. I also think that I need 2 cameras, right?

How would you do that? And how difficult is it?
