pitch

I don't really understand the FFT array that sonia produces. I tried making high and low noises into the microphone but it seems to make no difference. It seems fairly biased towards one end of the scale.

How would I get a value from the microphone that resembles pitch? I'm looking for a value between 0 and 255 (so I can express a colour based on the pitch of a noise).

Pitch detection is not a direct output of fft. Take a look at the FFT example on the Sonia site and notice that low bars are raised when you produce low-frequency (Bass) sounds, and the ones on the right will rise with hi-pitched sounds (try wisteling into the mike).  take a look at the useQualizer and useEnvelope commands to get a smoother fft signal.
