Check out http://www.ipodlinux.org/, which I blogged here. It's a Linux distribution for iPod, hopefully it would work with iPod Video too. It currently runs Doom 1.0 on a iPod Photo, so I don't see why it couldn't run a VM and Processing.

Its says all the iPods have 75 mhz CPUs, but the video-ipod definetly has to have more for decoding video. Well yes, then it should be possible Smiley
