I recall someone mentioning Processing for iPhones, but like Processing.js (another interesting alternative), it is probably a complete rewrite, since Processing is written in Java and you cannot (officially) run Java on an iPhone (AFAIK).

Why not use the Iphone SDK and program in C++ and Cocoa. you can also use openframeworks ( also based on C++) more information here : http://memo.tv/ofxiphone
