Using potentiometers to affect visuals...

I'm working on a projection installation, and will be using my laptop to output the video. I'm trying to figure out how to use my arduino in conjunction with potentiometers to adjust variable in my projection. (say there is a square and I want to change the size or color via potentiometer.) What is the best way to approach this? do I just put a pot at one of the inputs in my arduino?
