I've noticed that in some videos that people seem to just have objects or something being projected without a background

The sketch is running in fullscreen (or "Present") mode. The "background" is black, ie no light. Simple.

Most projectors will still project some ghost-black instead of complete shadow, and this is often noticeable beyond the bounds of where you can show a picture. This could possibly be avoided with a physical mask in front of the projector lens, but I haven't tried this myself. I'm pretty sure that people use non-rectangular masks for custom screens.
