At the moment my font default is black. Id really like it to be white, im sure this is amazingly simple however after searching the text examples I cant find a way of changing the colour of the font.

Does anyone know how?

use fill, this for red for example
fill(255, 0, 0);

you can only use

fill(255);

and it will be white
