Nikon D80 to Capture stills

I'm trying to make a stop-motion animation using a Processing program as the tool.  I've got a few different still cameras at my disposal to try and use to capture stills and import into Processing.  

Nikon D80
Canon G5
Olympus Stylus 1000
(and some others)  

I've tried to use them to capture stills, but Processing won't recognize any of them when I try to use a Capture.list().  I was wondering if there are any libraries that can control a still camera from Processing?

I would use a video camera, but I'm trying to capture stills at 1080x1920, so that I can play them back at HD quality.  Most of the video cameras that work in Processing that I've hooked up are only running at SD or worse.
