Note Detection through a single instrument

Hi there

I am trying to use processing in order to detect if a pitch is played on piano and then react on screen EG change the note on screen a different colour but i need it so that it actually detect pitch.
I realise this is a complicated process with harmonics and trying to find the fundamental but is there any way which you can select only certain frequencies to react with a certain threshold.

I Have tried using 'bin averages' but can't get it to be accurate enough as if C4 is presses the surrounding not also react.

Any Help would be much appreciated.
