There are some code examples on the site (e.g. http://www.processing.org/learning/libraries/hsvspace.html ) that use a Tuple datatype.
But delaring these always throws up a syntax error for me, and there is no reference to this datatype in the docs. A quick google search tells me that this is a more general java issue. How are they made to work in processing as in the above example?

in that example (on the page) they aren't .. because it's missing a secong part (tab) from the original sketch which comes with the processing download:
Processing -> Examples -> Libraries -> Video (Capture) -> HsvSpace
