For that visitors must not exit my program (in presentation mode: by double clicking the screen, or by hitting the "stop" label). How can I hide the "stop" button? How can I avoid exit the program by double clicking the screen?

At least not in my version of Processing! . You should worry more about the ESC character! Cheers!
