I'm learning Processing (and coding in general) to help me make specific kinds of sculptures that autogenerate from data.

I've bought both the Reas/Fry and Greenberg books, and have been equally bummed when each book gets to its 3D section and pretty much says "there's too much to cover so we won't cover any of it."

Is there anywhere that does cover 3D Processing in depth?

I devote about 165 pages to 3D in Ch's 13 and 14. (14 is a free download from foe site.) In addition, I include a few other examples throughout the book. Beyond that any general computer graphics text (programming variety) should provide some guidance.

If you want to do 3D stuff I recommend nehe.

http://nehe.gamedev.net/

It covers fundamental and advance topics for openGL and has most examples in many languages (including Java), so almost all of it is applicable. This is more advanced stuff than what Ira or Reas/Fry covers in their books and I'm assuming that's what you're looking for.
