I'm a beginning programmer and understand OOP in theory, and a little in practice (Actionscript 2.0 and a little C++).  What would anyone recommend studying, beyond the online reference, to get down to programming in Processing?  A good Java book on OOP?

I've found other people's code to be an invaluable source of knowledge. The exhibition section provides numerous links to projects that also provide source code.
