If you want to learn about color you might want to look up Johannes Itten 'Elements of Color' and some other books by him. This book is esentially an outline of a course he developped at Bauhaus. You might find it a bit outdated in the way it is presented (it was written very long time ago), but it is a must have book if you're looking into studying the topic seriously.

My favorite color book is the Interaction of Color by Josef Albers.
