I notice that Java 1.4 offers a way for Java apps to run fullscreen, something that would perhaps be handy for presenting proce55ing applications on a projector

yep, it's on the list. especially for exporting to applications.
the next release will be using java 1.4 on windows (somebody tell apple to hurry up) so we'll be able to support this soon.
the other fun thing will be if the full screen exclusive mode also lets us change color depth/screen size too.
