Controlling multiple servo's by Kinect, how to?


I'd like to make something like this for a little school project with Processing (not commercial use):

For what I want to try, I need some servo's following a person. Similar to an interactive wall like Hexi. I tried a couple of things like Shiffman's Average Point Tracking via Kinect and using Leap as 'scanner'. Unfortunately I did not find how to translate this Average Point to servo coordinates and Leap is not right for this...

I hope you guys can help me with some code, hints, links, (easy) tutorials, examples...
