Where do I change which JRE Processing uses?

I'm running Linux and I have the legit Sun JVM, but I don't know how to make Processing use it. Which environment variable or whatever do I change?

Read the comments at the top of the processing script. NB if you are using the default install you should already be using the Sun JDK as it is included in the tarball!!!!
