A good starting point would be the examples that come with Processing.

1. Open Processing
2. Select File | Examples from the menus
3. Expand the Libraries section
4. Expand the minim sub-section
5. Double click the example Monitor Input

Since you are now using the minim library I have moved this to the Core Library questions, hopefully someone experienced using minim will be able to help.
