Not sure what the eclipse plug-in you refer to is. Eclipse is an Integrated Development Environment, a tool-of-many-parts for software development. You can add plug-ins to the Eclipse IDE.

"Eclipse IDE for Java Developers" that you can download from http://www.eclipse.org/downloads/ should have all the features you need: code completion, keyword highlighting, pop-up Javadocs for Java classes, just-in-time compilation, refactoring, and many other useful features. Right out of the box, Eclipse should handle Java without any problems.

Following the instruction at http://processing.org/learning/eclipse/, I didn't have any problems with the installation, but Eclipse is far more complex than the Processing IDE.

I'm not sure why you would need plug-ins, at least to get started.  Maybe you should get the IDE up and running for a Processing test app first, and then add plug-ins? It looks like Proclipsing could add some useful features, automating initial project creation, but the ones you mention are already part of the Eclipse IDE.

Themidibus is a library. To use libraries you may need to import them to your project. You will certainly need to configure the Eclipse build path to find the library somewhere in your file system. This can be tricky. Eclipse can make development fly once you have it up and running, with its build paths properly configured.
