Put it inside the draw() loop.

draw() is the best option, but if you don't care to stuck your sketch, you can use while (true) { stuff; }

When I copy/paste that Void loop... into the Draw Loop.... it gives "Unexpected token, Void"

And when I use loop to place it within the Draw loop, It also does not repeat the case

Having trouble understanding how to change it to a while loop... for some reason I can't just change it from being a 'void' to a 'while'

Why are you using loop()? Do you use noLoop() somewhere else?
What are you trying to do, exactly? Loop until a key is pressed?

Loop was the easiest way to place that Subroutine into the Draw Loop,

Trying to switch modes when a user presses a key... continuing that set of actions until another key is pressed

11. void keyPressed()

16.   case 'q': mode = 2; break;

just dropped the switch (key) part into the Main Draw loop.

Any chance you know where I'd put something that I want to trigger everytime (Key) is changed?

3. DO this thing everytime Key is changed

Doesn't work as planned :P
Neither does putting is in the Keypressed(){   subroutine Void
