Haven't seen this myself and I've been running Processing on a Mac for a couple years now.  Google search on Processing.org shows a few other people having the same issue, but I don't see anyone giving an answer.  Are you running any other libraries with it or is just the most basic sketch giving the error?  Apple can have multiple versions installed, but I believe Processing requests the 32bit version.  So perhaps you only have the 64bit version installed or "turned on" under Mac Utilities, Java Preferences.  It's my guess that Processing is requesting the 32bit version, but for some reason Apple is not serving it up, so it then uses the 64 bit version, and then prints "Cannot run Java in 32 bit mode. Continuing in 64 bit mode."  But this is just a guess...  Let us know if you figure it out, so others with the issue can see the resolution.

Thanks for your response. Yah, I haven't figured it out and what you said sounds right, if processing requires 32bit and I only have the 64bit, I guess it explains why it is slow. I guess I'll just have to deal with processing being slow on my mac. Thanks again, TheGamersHaven

You know.. I saw something like this a bit back and if I remember, it was a bug on the Mac with JOGL.  If you set the size to the exact screen width and height, it drops the frame rate to 30 fps.  A work around was to subtract 1 from the height.  size(screen.width, screen.height-1); There are some other work arounds - check out this old Processing bug report on it.
