Yes, it will be available as soon as safari will implement HTML5 features (you need canvas here).

Your question isn't a programming question at all (well, nearly all questions here are programming questions, but specialized topics should go to specialized sections). I moved it to Processing Implementations since it is about the JS version, although Integration and Hardware would have been suiting too.

The question is for an app I want to make accessible via a webpage but once it is an app you have the app signed in order to write to a specific location, otherwise php is needed.

I can't say anything that Psysoul hadn't said already. In my experience, canvas-based applications can be slower than Processing (although some are surprisingly fast) but portable. And yes, that's the way to go for Apple mobile devices.
