In general, we replace the bound test with the % operator.

To be more explicit (now that I have more time), the computation looks like:
count = (count + 1) % sounds.length;
There are some shortcuts. Let's make the above code to be runnable (wrong array init delimiters, etc.):

1. String[] sounds = { "sound1.mp3", "sound2.mp3", "sound4.mp3" };
2. int count = 0;
3. void start() {}
4. void draw() {}
5. void mousePressed()
6. {
7.   // Consumes sounds[count] then increment count: no importance if it goes beyond the bound
8.   println(sounds[count++]);
9.   count %= sounds.length;
10. }

Note that you should load the sounds in setup(), to avoid loading them when they are needed (otherwise there might be a delay before playing them: the time of loading them).
