As in... the kind of drop down menu that you see at the top of most native applications?
It isn't wise to try to incorporate AWT / Swing components into your code because they behave differently than what Processing normally handles...

However, you can always use a contributed library...
Perhaps ControlP5's MultiList will be sufficient...

Once you have the menu, then you can call functions such as selectInput() to find spawn from your menu...
