People ask this once in a while. The answer always depends mostly on one thing: the skill level of the programmer. In general, such a project can be realised with Processing. This is in several aspect an advanced project. In your other post you state you are a beginner. So realistically speaking, this project is probably to ambitious as a first project.

Kinect is only one of the challenging aspects of this installation. The video also shows isolines, projection mapping, realistic fluid simulation. It depends on your respective implementations of these, which type of depth data is most suitable (int[], pvector, image). In this project you need very precise measures on a very specific 15cm range (aka where the sand is), so a lot of tweaking is probably required.

Since the project is downloadable. You could try running it with the given software first. The hardware setup is probably a challenge in itself.

it is very easy to do but can't generate fluid animation that showed in the end of the video.

But I think there is one constraint for this.

The resolution of Kinect depth image is 640*480.

I could only output this resolution to the projected image in this case.

Nevertheless I will try your method first.
