I know this might cause controversy but I've found I can run processing quite succesfully with the following:-
java version "1.6.0_18"
OpenJDK Runtime Environment (IcedTea6 1.8.4) (6b18-1.8.4-1)
OpenJDK 64-Bit Server VM (build 16.0-b13, mixed mode)
I can run sketches with vanilla processing (ide is centered on screen and is resizable).
I can run ruby-processing and processing.py sketches.
OS Aptosid 2010 03(Debian unstable)
Kernel 2.6.37-0.slh.7-aptosid-amd64 (using fluxbox or xfce)
For opengl I'm using the NVIDIA 195.36.31 driver (which aptosid will install for you, default is nouveau driver with mesa acceleration) and of course I extracted the 64 bit binaries .
So the Sun may have fallen in, but even if the Oracle keels over or starts getting funny then you can still run processing.

It seems that Apple has also come board with the OpenJDK initiative if the
