Hi, i am a new user with Processing and Arduino.

My question is: how can i make a power point presentation (or a JPEG file) to be popping out from a screen when i put an object in front of the sensor?

If there are different objects with different colors, how can i assign a color to a specific file?

Your screen is flat, so you can't make anything actually pop out of the screen.
You can, however, give things shadows so it looks like they're popped out:
