iCube-X (bluetooth) does not work in Processing

I'm relatively new to the iCube-X kit and I'm not really sure how to make it talk to Processing.
I am using the iCube-X sensors (GForce3D-35 1.1 and 1.2), which is essentially an accelerometer. I am using this combined with the Wi-microDig.
My big problem is that I have not been able to view any of the data coming in from the sensor. I have been able to identify the sensor via bluetooth and the serial library example sketches, but I'm not sure how to go about creating a sketch that will be able to identify the data that is being streamed from the 3-axis of the accelerometer.
Apparently, the iCube-X editor can act as a a bridge between the bluetooth to MIDI data. But I am yet to see proof of this!
Has anyone managed to take the values coming through the editor into Processing?
Any advice, direction or help would be GREATLY appreciated!
