I've been interested in glitch art as well, although I didn't find the time yet to get into it processing-wise (one more item on a long to do list! ). But brainstorming I'd imagine the following functions could be useful for these kinds of graphics:

pixels[]
bitshifting
get()
set()
filter()
blend()
tint()

As well as more practial techniques like using an oversaturated color palette, not using a background call in draw and applying for loops to generate random points/lines/scanlines.
