what does your project looks like? there are different ways depending on what you are working with.
if you use colors like fill(255,0,0); just use gray values now fill(100);
another way would be to use filter(GRAY) http://processing.org/reference/filter_.html
makes sense if you draw images, or maybe draw everything in an off screen buffer...
