To manage secondary "screens", you need a state variable. If it is 0, draw() calls the welcome screen display. If 1, it shows the game. When 2, it shows instructions.

so it's global consts & vars:

1. final int stateWelcomeScreenDisplay=0;
2. final int stateGame=1;
3. final int stateShowInstructions= 2;
4. int stateOfProgram = stateWelcomeScreenDisplay;

then in draw() have :

1. switch(stateOfProgram) {
2. case stateWelcomeScreenDisplay:
3.    doStateWelcomeScreenDisplay();
4.    break;
5. case stateGame:  // here once was a typo (edited)
   
6.    doStateGame();
7.    break;
8. case stateShowInstructions:
9.    doStateShowInstructions();
10.    break;
11. }

then you need the functions like
doStateWelcomeScreenDisplay(), doShowInstructions() etc.

in doStateWelcomeScreenDisplay() present a
Start-Button

yeah, I had a typo in my switch  

duplicate

1. case stateWelcomeScreenDisplay:

you see it when you read it slowly

go to the second

1. case stateWelcomeScreenDisplay:

and put

1. case stateGame:

instead
