How do you speed up the display refresh rate? I seem to recall being able to lower it, and even set it to a certain number of FPS, but I can't remember how.

The frameRate() function. Example:

frameRate(200); //This is unecessarily fast

You shouldn't ever need to increase the frame rate as 60 fps is hardly different from 100 fps, in terms of what can actually be seen. For reference, most movies run at 30 fps or lower. If you feel that you need to increase the frame rate, it is probably not because the frame rate is set too low, but rather because you need to optimize your program and make it run faster.
