bizarre mac mini display problem - please help- opening is Saturday !

I am installing my first New Mediai nstallation using Processing. I have a bizarre problem.
The mac mini display output is working differently from the macbook and it will not output correctly
from the sketch.
I am using the fulllscreen() api which is working great. It works at home with my samsung monitor
on both the laptop and mini.
At the gallery the fullscreen() only works with my laptop.
When the same program same OS with the same cable from the
Mac Mini, instead of a nice full screened Processing sketch I get
a large 1600 x 1200 or so screen blacked out except for the center
square of 640 x 480.
Any ideas?
I tried to go S video and composite to get around this but no dice the apple
adapter does not out put legible video from that adapter.
I have tried everything I can think of. I cannot yet rewrite the sketch to a full size screen
because it east too much processing power. It is a CV installation.
I'm on Snow Leopard and intel duos.
