It would be easier to just use an existing 3d model of a heart that you find somewhere online and import that into Processing. Then you can use scale to increase/decrease the size.

Visually you could also add a BPM and a graph for example based on the incoming beats.

Scaling a 3D model won't be the most realistic option of course. If you want an actual detailed 3D model of a heart that contracts and expands realisticly, this will be a substantially bigger challenge. Unless perhaps you can get a series of models for the whole range from contracted to expanded, like 3D snapshots. Then you could just display each consecutively and back.
